Iodine is
essential for fat metabolism, thyroid function and the production of sex
hormones. Muscle cramps, cold hands and feet, weight gain, poor memory,
constipation, depression and headaches are signs of deficiency. Deficiency has
been linked to mental retardation, coronary heart disease, polio and breast
cancer. Requirements vary widely. If your ancestors came from seacoast areas,
your requirement is higher than those whose ancestors came from inland regions.
Iodine utilization requires adequate levels of Vitamin A supplied by animal
fats. In excess, iodine can cause thyroid problems. Avoid iodized salt and
iodine-fortified bread. The best sources are sea vegetables such as kelp,
dulse, nori, saltwater fish, lettuce, asparagus, carrot, cabbage, cranberry, cucumber,
pineapple, prune, tomato, radish, watercress, and spinach.
